Rabbit Sauce Piquante

Rabbit  (cleaned/cut up)

2 Tbsp  flour

4 Tbsp  cooking oil

1 large onion (chopped)

2 cloves garlic  (minced)

 

1 stalk celery (chopped)

Can tomatoes sauce / 8 oz

1 can rotel tomatoes

¼ cups parsley & onion tops

Lightly flour – Rabbit and Brown in pot. Remove and make a roux. Add vegetables – Cook until tender .Add rest of ingredients and rabbit. Cook until rabbit fall apart.

Serve over Cooked Rice.
