Happy Monday ! It;s been a busy weekend – reworking my site- so bear with me.
Storms came through this weekend and knocked out power and internet. We are up today and everything is looking good. Typical weather for April .
As promised – I thought I would introduce you to my little town in Louisiana.
Melville is – Melville is a town in St. Landry Parish, Louisiana, United States. The population was 1,376 at the 2000 census. It is part of the Opelousas−Eunice Micropolitan Statistical Area. It was founded in 1889 and is known as the Atchafalaya River Catfish Capital of Louisiana. (wikipedia)
That means – No traffic lights, no fast food but lots of churches and great people. Typical small town in South Louisiana. So enjoy this weeks post as I highlight – My Little Town.
Recipe for Catfish-
Catfish Courtbouillon
Fresh Catfish -cut up
1 large onion , chopped
1 cup onion tops. chopped
1/2 cup parsley chopped
1 can tomato sauce
1 tbsp. flour and oil
1 can water
salt & pepper to taste
In a heavy pot – place oil let heat. While that happen- Season catfish with salt and pepper.Put in seasoned catfish ,onion,tops and parsley.Then pour in tomato sauce and a can of water -sprinkle the flour on top of all ingredients. Stir and Cook in Covered pot until onions are cooked. About 30 minutes. Depends on amount of fish .
Hint –
* Don’t stir pot with spoon -shake the pot to keep from having the sauce stick.
