Thursday – is all about the Food @ LEL !
Today’s Spotlight is Mexican food which happens to be my Mothers favorite food.
Also in case you didn’t know Cinco De Mayo is May 5th ! Lisa
Cinco de Mayo (pronounced: [ˈsiŋko ðe ˈmaʝo]; Spanish for “Fifth of May”) is a celebration held on May 5. The date is observed to commemorate the Mexican Army‘s unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza.
In the United States, Cinco de Mayo has taken on a significance beyond that in Mexico. In the U.S. the date has become associated with the celebration of Mexican-American culture.( from Wikipedia)

Some Tasty Recipes –
2 c chopped onion
1 T butter
1 pkg chopped frozen spinach
6 jalapeno peppers
1 pt sour cream
2 can cream chicken soup
4 green onions top
1 pkg Doritos
4/6 cups cooked/chopped chicken
2 cups Monterrey jack / shredded
Cook onions is butter-add spinach, jalapenos, sour cream soup, onion top and salt/pepper to taste. In a greased casserole dish layer- Doritos-chicken –spinach mix and cheese. Ending with cheese. Bake at 350 for 30/40 minutes. Can be made a day in advance.
Fiesta Mexican Casserole
1 lb ground meat
1 tsp minced garlic
¼ tesp salt & pepper
½ loaf of 8qounces of Velveeta cheese
Can of each
Green chilies /chopped
Diced tomatoes& green chilies (rotel)
Cream of mushroom soup
1 cup shredded Mexican blend cheese
½ c milk
3 c cooked rice
2 cups tortilla chips / crushed
Cook ground meat,onion,salt,pepper . Add garlic- Melt cheese in microwave until smooth-add to meat mixture. In a bowl – Combine chilies and next 6 items – Stir. Add meat mixture. Layer 11/2 c of chips pour mixture in and top with remaining chips . Bake at 350 for 30 minutes.
