Bundt Carrot Cake
Today’s recipe is a twist on classic Carrot Cake this on is baked in either a tube pan or Bundt pan. Enjoy
- 3 eggs
- 2 C sugar
- 3 C flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp soda /dissolved in 1/3 C Buttermilk
- 2 tsp cinnamon
- 1 tsp vanilla
- 1 small can of crushed pineapple ( with liquid)
- 1 C pecans
- 11/2 C Wesson oil
- 2 C grated carrots
Separate eggs – beat each & hold to the side. . Mix other ingredients together -Fold in Eggs mixture. Place in greased tube pan -Bake at 300 for about 1 1/2 hours , Let Cool & glaze or dust with powder sugar.
