Bundt Carrot Cake

       Today’s recipe is a twist on classic Carrot Cake  this on is baked  in either a tube pan or Bundt pan. Enjoy

  • 3 eggs
  • 2 C sugar
  • 3 C flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp soda /dissolved in 1/3 C Buttermilk
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 small can of crushed pineapple ( with liquid)
  • 1 C pecans
  • 11/2 C Wesson oil
  • 2  C grated carrots

Separate eggs – beat each & hold to the side. . Mix other ingredients together -Fold in Eggs mixture. Place in greased tube pan -Bake at 300 for about 1 1/2 hours , Let Cool & glaze or dust with powder sugar.
