You can find a wide variety of freshwater fish along the coast of Louisiana waiting to be caught including:

  • Catfish

Today we celebrate going fishing a past time enjoyed by many. As a child my Grandfather would take all the kids to the river to spend the afternoon trying to catch river catfish. But sometimes we would come home empty. Now I buy my fish at the market unless so family is sharing fish from a days catch. 



Today Recipe : 

Baked speckled trout

Fillets of speckled trout

1 1/2 stick of butter (melted)


Bread crumbs ,salt & pepper crushed pecans ,seasoning

Preheat oven 350. Soak fish in Milk for 2 to 3 hours. Drain fish and season. Roll in bread crumbs,pecans & seasoning .  Then Melt 1/2 stick of butter and place in baking  dish. Place fish  on top of melted butter in the pan  and cover with the rest of the butter . Bake for 20 minutes. Lisa
