Homemade Goodies * Packing up for College

I am sending my son back to college tomorrow after his Winter break – I am making a couple of special treats to pack up and send with him . Some of Mom homemade Granola custom made to order for my son and Cheesy crackers just the way he loves them. Enjoy these Monday treats and enjoy making them your own. Lisa

  • Oatmeal (4 Cups)
  • 1 C Coconut flakes
  • 1 C Nuts
  • 1/2 C Dried Fruit
  • spice of your choice
  • 1/3 C honey
  • 1/3 C fat (your choice)
  • 1 1/2 tsp flavoring

Directions:

  • Preheat oven to 300 degrees
  • Combine Dry ingredients, excluding dried fruit.
  • Combine Wet ingredients.
  • Combine Wet and Dry ingredients. Do a taste test. Adjust to taste – more sweet, more fat etc.
  • Spread on baking tray and bake until golden, approximately 35 – 40 minutes, tossing twice.
  • Stir through dried fruit. Cool. Store in an airtight container.
  • Substitute ingredients as you like – make it your own recipe. Lisa

Cheese Crackers :

  • 1 C shredded Cheddar Cheese
  • 3/4 C Flour
  • 4 T butter
  • 1 1/2 tsp salt

Put first 3 ingredients in food processor and form a dough. Chill at least an hour. Take let dough out and roll out to about 1/8 in thickness -sprinkle with salt and cut with pizza cutter into 1 inch squares. Place on cookie sheet and Punch holes in middle of crackers. Bake at 350 for 10-12 minutes. You can add spice if you like them hot or herbs to the dough.
