It’s another Monday and today I am at the Crawfish Festival in Breaux Bridge ,Louisiana.
Breaux ( B rough) Bridge is a small city in St. Martin Parish, Louisiana, United States. The population is 8,139 . It is part of the Lafayette Metropolitan Statistical Area
Breaux Bridge and Crawfish have become symbolic in their relationship. Restaurants of Breaux Bridge were the first to offer crawfish openly on their menus, and it was here that the now world-famous crawfish etouffee was created. Breaux Bridge became so well known for its crawfish farming and cooking that, in honor of its centennial celebration in 1959, the Louisiana legislature officially designated Breaux Bridge as “la capitale Mondiale de l’ecrevisse” or “the crawfish capital of the world”. Since this designation, Breaux Bridge has hosted the annual crawfish festival, recognized as one of the state’s finest festival.

If you are entering the Crawfish Etouffee Cook off you need a recipe:
- 3 lb peeled clean crawfish
- 2 sticks of butter
- 2 med onions/ chopped fine
- 2 ribs celery /chopped fine
- 1 med bell pepper/ chopped fine
- 3 cloves garlic / minced
- 1/2 C parsley / chopped
- 3 T flour
- 1/2 C water
- 1 8 oz can tomato sauce ( Ketchup works)
- salt and pepper to taste
In a large skillet melt butter-add onions,bell pepper and garlic saute till soft Add flour to thicken – cook until golden.( about 10 minutes) while string. . – then add water and tomato sauce. Cook about 30 minutes and check to see if you need more liquid. Add Crawfish and cook another 5 to 10 minutes. Serve over white rice and top with parsley
If you dont want to use all butter you can split it with butter and corn oil instead. My Mom always use Ketchup instead of tomato sauce -so you choose. Instead of water you can use chicken stock instead. If No fresh crawfish -Frozen works ( let thaw first) .
