Saturday * Brunch Time

Hello and Welcome ! Another week of stay at home is done and the near is close. That is the deadline of April 30th is next week and our Governor as not release what’s going to happen after that. But I have been making some fabric face mask for family in preparation too the coming weeks news. But we will see what May brings. We are all safe and healthy so I hope this post finds you the same way . Lisa

My Brunch recipes today is Stuffed Tomatoes

  • 6 medium tomatoes

1 cup garlic/cheese croutons, crushed

2 tablespoons grated Parmesan cheese

2 tablespoons grated American or cheddar cheese

  • 4 tablespoons melted butter

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

  • Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert onto paper towels to drain. Mix stuffing ingredients. Spoon into tomatoes; sprinkle with parsley.
  • Place tomatoes in a baking dish; cover tomatoes with aluminum foil to prevent over-browning of stuffing. Bake at 350° for 30 minutes or cook on grill until done. Sprinkle fresh herbs on top/

This version has No meat so great for non meat eaters. You can serve with a big salad and french bread as a meal . Or serve with ham and eggs for Breakfast side. .Enjoy!!!!
