Corn Salad ( with Mayo)

  • 2 16 oz can of whole corn (drained)
  • 2 Large cucumbers (peeled and diced)
  • 3 C tomatoes (diced)
  • 1/4 C mustard
  • 1/2 C mayonnaise
  • salt and pepper

Combine in large bowl -Mix well and Refrigerate.

version two : ( No Mayo)

INGREDIENTS4 c. 

4 C fresh Corn

cherry tomatoes, halved

1/4 red onion, finely

3 Tbs of olive oil

Juice of 1 lime

Kosher salt

Freshly ground black pepper and a sprinkle of chopped Basil

Toss all ingredients together in a large bowl, then season with salt and pepper. 

Grilled Corn

4 ears corn, shucked

Butter, for serving

Kosher salt

  1. Preheat grill to high and heat for 10 minutes. (Alternatively, preheat grill pan to high.) Add corn and cook, turning often, until charred all over, about 10 minutes.
  2. Spread butter over warm corn and season with salt.
