Christmas Eve Gumbo

In South Louisiana families gather together on Christmas Eve and attend Christmas Mass and enjoy a bowl of Gumbo.

  • 2/3 C oil
  • 1 C flour
  • 1 large onion chopped
  • 2 to 3 ribs of celery , chopped
  • 1 bell pepper chopped
  • 1 minced garlic
  • 4 to 6 C water
  • 1 pkg Gumbo crabs (small)
  • 1 bag of shrimp
  • 1 lb chopped cooked okra
  • 1 can tomato, undrained
  • 1 T Worchester sauce
  • salt and pepper

Make a very dark roux in a large pot with oil and flour. Add onions and garlic. Cook until soft. Add tomato and cook about 30 minutes. Add okra, water, and seasoning and cook another 45 minutes. Add shrimp and cook a few minutes-add crabs and simmer about 20 minutes. Adjust seasoning to tase. Serve over white rice.
