4 strips of bacon

2 cups chopped onions

9 ears of corn

2 cups grated Cheddar cheese

1 cup of half/half cream

1 jar chopped pimento

¾ teaspoon powdered ginger

Salt & pepper

Cook bacon until crisp. Remove in dripping brown onions-Cut corn off cob and scrap. And corn and cheese to onions-Cook, Add rest of ingredients and crumble bacon on top –Heat in casserole until Hot. Serves 8-10
