Homemade Goodies * Packing up for College

I am sending my son back to college tomorrow after his Winter break – I am making a couple of special treats to pack up and send with him . Some of Mom homemade Granola custom made to order for my son and Cheesy crackers just the way he loves them. Enjoy these Monday treats and enjoy making them your own. Lisa

  • Oatmeal (4 Cups)
  • 1 C Coconut flakes
  • 1 C Nuts
  • 1/2 C Dried Fruit
  • spice of your choice
  • 1/3 C honey
  • 1/3 C fat (your choice)
  • 1 1/2 tsp flavoring


  • Preheat oven to 300 degrees
  • Combine Dry ingredients, excluding dried fruit.
  • Combine Wet ingredients.
  • Combine Wet and Dry ingredients. Do a taste test. Adjust to taste – more sweet, more fat etc.
  • Spread on baking tray and bake until golden, approximately 35 – 40 minutes, tossing twice.
  • Stir through dried fruit. Cool. Store in an airtight container.
  • Substitute ingredients as you like – make it your own recipe. Lisa

Cheese Crackers :

  • 1 C shredded Cheddar Cheese
  • 3/4 C Flour
  • 4 T butter
  • 1 1/2 tsp salt

Put first 3 ingredients in food processor and form a dough. Chill at least an hour. Take let dough out and roll out to about 1/8 in thickness -sprinkle with salt and cut with pizza cutter into 1 inch squares. Place on cookie sheet and Punch holes in middle of crackers. Bake at 350 for 10-12 minutes. You can add spice if you like them hot or herbs to the dough.

College Life Update * Dorms, Laundry & Football

We had a busy weekend – we drove up to spend some time with our son at College and attend a football game. One of our concerns about our son has been his transition from home school (virtual student ) to college student  living in the dorm with a roommate. But it has been a smooth transition -with a great roommate that compliments my son’s personality. And he’s loving living in a dorm with lots of students   and the whole college experience :  Lisa



One of the Lessons he’s learned is Laundry : Here’s a fun talk  we had on the way to Game :

J – Mom why Do girls have so much Landry ? They have bins & use up all the washers !

Dad – Well they Change cloths a lot.

Mom- I am sure they just seem like that they have a lot of baskets. They probably separated there clothes before washing.  To make it easier.

J – I just put mine in all together and set the timer. ( Yes! There’s an APP for that ) Washy

Note to self buy all dark items.

Saturday Road Trip* Recipe

It’s Saturday ! 

My Sons at college but the Parents are going bye to drop off some missed items . I have just enough time to whip this up to take to him : Something healthy after a week of junk .



Saturday Recipe ” 

  • 1 C AP flour
  • 1 C  quick cooking whole wheat cereal
  • 1 1/2 t baking powder
  • 1/4 t salt
  • 1/4 C milk
  • 1/3 C honey
  • 1/4 C oil
  • 1/3 C peanut butter
  • 1 Egg  ( well beaten)


Directions for Peanut Butter Honey Muffins : Mix first 4 ingredients – make a well. In the Center of the well ( combine milk,honey,oil & peanut butter) Stir together until Moist. Spoon into greased muffin tins. Bake at 400 for 20-30 minutes.  Lisa 

College Move In Day !

Today is College move in Day !!



We are on the road early to day as my son moves in to his dorm room at college today!

He will be missed but not to far away so he can come home and visit.

No Pet’s Allowed

Good Morning ! 

As many as you know my Son is getting ready to go away to college. He’s already signed up for housing & we got a list for things needed for his dorm room  . But  Something is  missing  from the List & it’s  a  Big thing – What is it ? 

Well here’s a short list : 

  • We have a laptop /  backpack
  • calculator
  • Bedding (cleaning supplies)
  • refrigerator
  • X box (games)
  • Food  /storage
  • clothes

But No Pets !!! 

Yes – His kitties.  His best friends, study partners & school  mate  and bed  hogs .  I don’t know what we will do. I am trying to think of ways to smuggle in a cat each time we visit. For Some Cat Therapy. ( Just kidding ! maybe) He will just  have to come home to visit his cats.  This is Dotcom. ( he has a dot on his paw) ,

College Road Trip Time *

College Road Trip !!!

My son is a Senior this year in his on line public high school -chartered by our state. Because of this he took the ACT & got many offers from all over the country. If you have a student in an on line school or home school and they plan to go to College. Do your research on admittance. Many require ACT/SAT grades & transcripts. Plan ahead on options out  there but yes it is possible,  Many private school  ( Harvard)    encourage non traditional students this is a list I found but check your state :  10 best colleges for homeschoolers.  

Millsap College ,Jackson Mississippi


is an accredited, liberal arts college in Jackson, Mississippi, founded by members of the Methodist Church in 1890. Consistently ranked as one of the best values in higher education, we provide you with a broad exploration of the humanities, sciences, social sciences, and business. Located minutes from the Capital the Campus has an  Enrollment about 900 students /classroom of  20.With lots of emphasis on writing & communication this lovely campus is a quite spot among the downtown traffic.






Tuesday * College road trip

Hello Tuesday ! The next couple of Tuesday I will be sharing our college road trip ! Join us on our adventure _ Lisa 

Its another busy day at hour house – school & then volunteering at the Library.

Time is passing so fast – graduation plans are just around the corner & college had to be decided on . With all of the hard work he did he had many offers to choose from.  Both in state Public schools & Private college who like non traditional students. We narrowed them down by what he wanted to study (environmental science /computers) ,Size & location.

Why Size ? As he had been out of a regular classroom for 6 years we though a small college & classroom would suite him better . The top 3 we visited Up first :

College Tour Time – 

First stop about 3 hours from home ( near New Orleans )- Nicholls State University, founded in 1948, is a public university located in Thibodaux, Louisiana, United States. Nicholls is part of the University of Louisiana System of universities. College of 6,000 on the banks of Bayou Lafourche.
