Coffee and Cinnamon Rolls

Happy Saturday Morning ! Another rainy day in South Louisiana. So My plans for the day – is Netflix,Books and some crafts. But first up while everyone is sleeping and I am having morning Coffee. I am going to mix up a cinnamon rolls for breakfast for when they get up !

  • Dough
  • 1/2 C milk
  • 1/2 C butter
  • 1/3 C sugar
  • 1/2 tsp salt
  • 11/2 tsp yeast
  • 2 T warm water
  • 21/4 C Flour
  • 1 egg

Scald milk add butter-Add sugar,salt -Stir. Dissolve yeast in warm water and Add to milk. Add Flour and Egg and Mix. Place on floured board and knead (8minutes)-place in greased bowl in let rise,

  • Cinnamon Sugar
  • 1C sugar
  • 1 T Cinnamon
  • 1 T butter (melt)
  • 11/2 C light brown sugar

Mix Together dry ingredients . Roll dough out to 8 to 20 inches. Cover with melted butter- cover with sugar mixture (leaving 3/4 C ) for top. Roll and cut into 24 pieces. place in well buttered dish and sprinkle the rest of the sugar mixture in top . Bake at 375 for about 20 minutes or until done.

Breakfast Cranberries Scones

Today is a  beautiful fall day after the rain and storms came through earlier in the week. Look like some yard cleaning is on the schedule today –

For breakfast as I mentioned to a friend & fellow blogger I am making scones today :

Cranberries Scones 

  • 1 C AP flour
  • 1 1/2 Tsp baking powder
  • 1/8  tsp Salt
  • 1/4 C Sugar
  • 1/4 C  Cold butter
  • 3 T whole milk
  • 1 Egg ,beaten
  • 1/4 C  dried Cranberries
  • 1/4 C Course Sugar
  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten egg; add to crumb mixture just until moistened. Stir in cranberries.
  • Turn onto a floured surface; knead gently 6-8 times. Pat into a 6-in. circle. Cut into four wedges. Separate wedges and place on a baking sheet coated with cooking spray. Brush with remaining egg; sprinkle with coarse sugar.
  • Bake at 425 for  12-15 minutes or until done.

Homemade Cinnamon Raisin English Muffins

It’s Saturday & my sons home from college ! Time to try a new recipe for breakfast : 

 

 

Whole-Wheat-English-Muffins-3

  • 1 C milk
  • 1/4 C water
  • 1/4 C  margarine
  • 4 C flour
  • 1/4 C brown sugar
  • 1 package yeast
  • 2 eggs
  • 1 c Raisins
  • 1/4 c corn meal
  • 1 tsp salt
  • 1 T cinnamon

Heat – milk,water and butter. In a large boil – Add liquid,2 C flour,sugar,cinnamon,yeast,salt & eggs. Mix well add in the rest of flour and raisins. Leave covered until it double in size. Knead & roll out into 3in circles, Lightly press in corn meal and place on cookie sheet and let raise a second time. Bake at 375 for 8 minutes turn with spatula and bake another 8 minutes.  Let Cool and split .

  History of the poem :

The origin of the lyrics to “Rain rain go away” is said to date back to the reign of Queen Elizabeth I (1533-1603), one of the English Tudor monarchs. During this period of English history there was constant rivalry between Spain and England culminating in the launch of the Spanish Armada in 1588.
