Today we are in Opealousa ,Louisiana visiting. In honor of the Yam festival that was held every October when I was growing up I am sharing a local holiday recipe : Yam Casserole
That sweet, orange-colored root vegetable that you love so dearly is actually a sweet potato. Yes, all so-called “yams” are in fact sweet potatoes. Most people think that long, red-skinned sweet potatoes are yams, but they really are just one of many varieties of sweet potatoes.
- 3 C smashed yam
- 1/2 C sugar
- 1/2 C brown sugar
- 2 eggs
- 4 T margarine
- 5 1/2 oz pet milk
- 2 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp ginger/ nutmeg
Topping:
- 1/2 C brown sugar
- 1/2 C margarine
- 3 T flour
- 1 C chopped Nuts
Beat well – place in baking dish. Mix topping and place on top. Bake at 350 -30 minutes
