Welcome to class : today a little Louisiana history and traditions. So come with me across the Miss River to Cajun Country :
The center is a unit of the Jean Lafitte National Historical Park and Preserve, and is located in Eunice, Louisiana. The only one of its kind, the center tells the story of the Acadians who settled the prairie region of Southwest Louisiana and has a full demonstration kitchen used to teach old Cajun recipes. View extensive exhibits and artifacts interpreting the history, language, music, and architecture of the Cajuns. Interpretive panels in French and English explain the history of the deportation of the Acadians and the migration of other cultures to Louisiana.

The Eunice Courir de Mardi Gras (Fat Tuesday Run) dates back from when the town was first established in the late 19th century. In fact, this year, the Eunice Mardi Gras Association is celebrating their 100th courir! During a “courir,” riders go from house to house soliciting “donations” of food items to culminate in a community-wide gumbo. The highlight of the event is the chicken run, an honored tradition for ambitious, young revelers. During the run, the “capitaine” will release a chicken or guinea. The lucky person who catches the fowl gets bragging rights for the rest of the evening.

- Acadiana with Kids 10:00-11:00 a.m. – Explore the people, places, and natural world of Acadiana through activities for kids of all ages. A parent or guardian must remain with children six and under. Free.
- Cajun French Conversation 1:00-2:00 p.m. – Speak and learn basic conversational Cajun French and help keep French alive and well in Louisiana. Free.
- Ranger Talk 2:00-2:30 p.m. – From history to culture to music to food, learn more about life in Acadiana. Free.
- Music and Dancing 2:45-3:45 p.m. – Enjoy local bands and kick up your heels on the center’s dance floor. Free.
- Cooking Demonstration 4:00-5:00 p.m. – Discover the secrets of local cuisine with a cooking (and tasting) demonstration. Free.
- Rendez-vous des Cajuns 6:00-7:30 p.m. at the Liberty Theater (next door to the Prairie Acadian Cultural Center) – Known locally as “the Cajun Grand Ole Opry,” Rendez-vous des Cajuns is a live show featuring Cajun and zydeco music, storytellling, a big dance floor, and family fun in a historic 1920s theater.
