In my Kitchen this Thursday I am sharing some great pickle recipes. Make these now and be ready for Picnic Season this Summer.
- 8-10 cucumbers/sliced then
- 3 onions
- 3 cloves garlic /thin sliced
- 1 tsp each : dry mustard,turmeric,celery seed
- 2 tsp dill seed
- 1/4 C Salt
- 4 Cups vinegar
- 4 C Sugar
Mix well and place in jars. Refrigerate for at least 1 week .
Watermelon Rind
- 4 lbs watermelon rind
- Lime water( 2 T with 2 q water)
- 2 T all spice
- 2 T cloves
- 10 (2 inch cinnamon sticks)
- 1 1/2 q white vinegar
- 1 lemon / sliced thin
- 1 q Water
- 4 1/2 lb sugar
Cut rind into 11/2 in cubes and soak 2 1/2 hours in Lime Water. Drain and Cook about 1 1/2 hours. Let stand overnight-Drain. Make spice bag out of cheese cloth and boil with vinegar,lemon,water and sugar. Add Rind and Cook until liquid is thick . Remove spice bag and place syrup and rind in clean hot jars. Seal .
