Sweet Potato Biscuits
Enjoy these with butter and local honey, jam or jelly.
1 cup boiled and mashed
sweet potatoes
1/2 cup milk
6 tablespoons melted butter
1/4 teaspoon salt
1 tablespoon sugar
2 1/4 cups low-gluten, self-rising flour, such as White Lily
Preheat the oven to 500 degrees. In a bowl, combine the sweet potatoes, milk, butter, salt and sugar, mixing well. Stir the flour into the sweet potato mixture until just combined. This will be a very soft, moist dough. Turn the dough out onto a floured surface, and, with floured hands, knead a couple of times. Pat the dough out to a thickness of about a half-inch, and cut biscuits with a floured cutter. Place the biscuits a half-inch apart on an ungreased baking sheet, and bake until lightly browned, about 10 minutes. Serves 12.
