- Clean Chicken
- With Poultry Scissors cut Backbone
- Break the Breast Bone ( Flatten)
- Season Chicken
- Skin Side up on direct grill heat
- Flip over on Skin Side Indirect Heat (325)
- Place Heated Skillet on top of Chicken
- Place a container of liquids to keep moist
- Cook until done
- Internal temp 165 degree or more
