Family Memories :
In my case most of my immediate Aunt and Uncles have passed on but I remember them with food. Aunt Jane who taught special Ed for many years always cooked on the Weekends – Chili Dogs for Saturday and old fashioned Chicken stew with green peas for a side. I still think of her every time I make a pot of Chicken stew .
Creole Chicken Stew
- 2 chickens -cut up
- 3 cans tomatoe sauce
- 2 onions chopped
- 1/2 green pepper /chopped
- 1/2 rib celery /chopped
- 1 clove garlic /chopped
- salt and pepper to taste
In a large skillet season chicken and brown in oil. Then add the rest of ingredients to the pan -Cover and Cook on low until tender. Serve with white rice.
