Duck & Sausage Gumbo

Roux

8 large ducks /cleaned ,cut up & browned

2 lb of sausage

6 Cups of Trinity ( mix of onions,bell pepper & celery)

Salt- 5 Tbsp , 2 tsp black pepper, 1 tsp red pepper

  1. Make a Roux    3 c of flour /31/2 C cooking oil . Until dark brown .
  2. Remove from stove add – 6 cups of ( chopped onions,green pepper & celery) -Add 2 gallons  of water little at a time. Place back on stove.
  3. Add duck.salt & pepper & hot sauce. Cook 3 hours
  4. Add Sausage in the last hour. Season to taste -serve with Rice
