Saturday brunch * Bacon and Cheese Omelet

ts’s Saturday Morning in sunny South Louisiana !  and all is quite. College football is happening away this weekend in so it’s home today.  


Time for Brunch   = Bacon and Cheese Omelet

  • 6 strips of bacon
  • 1 small onion  (minced)
  • 1 small green pepper  (minced)
  • 6 eggs beaten
  • 1/2 C diced American Cheese
  • Salt & pepper to taste

Fry bacon until Crisp. Take out of skillet and save dripping. Saute onion and peppers until soft.

In Hot  omelet pan place 2 T bacon dripping – pour in Beaten eggs with salt and pepper. . Turn down pan to Low : let eggs cook when top starts to set add onion,peppers,bacon and cheese. Fold over so the cheese will melt .

Serve with lots of hot buttered toast and Coffee.
