Salmon Patties and Creamed Peas

  • 2 -4tablespoons  AP flour
  • 2 -4teaspoons  oil
  • SALMON PATTIES
  • 1(16 ounce) can  Salmon reserve liquid
  • 1cup  instant mashed potatoes
  • 14cup  Onion grated or diced
  • 2teaspoons  lemon juice
  • 14teaspoon  ground pepper
  • 2large  Eggs
  • CREAMED PEA SAUCE
  • 2tablespoons  Butter
  • 2tablespoons  AP flour
  • 12teaspoon  dried Dill Weed
  • 12teaspoon  Cajun seasoning salt
  • 34cup  Milk
  • 1(8 ounce) package  : Frozen Green Peas
  • PATTIES:
  • Drain liquid from salmon and reserve for sauce.
  • Remove bones and skin, and flake salmon.
  • Form into 4 patties.
  • Dip both sides in flour. Fry patties in oil -until lightly brown.

  • SAUCE:
  • While patties are cooking, place peas in colander and rinse with hot water to defrost.
  • Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
  • Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
  • Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
  • Stir in peas.
  • Place patties on individual plates and spoon the sauce over.
