Homemade Pickles * Summer staple

In my Kitchen this Thursday I am sharing some great pickle recipes. Make these now and be ready for Picnic Season this Summer.

  • 8-10 cucumbers/sliced then
  • 3 onions
  • 3 cloves garlic /thin sliced
  • 1 tsp each : dry mustard,turmeric,celery seed
  • 2 tsp dill seed
  • 1/4 C Salt
  • 4 Cups vinegar
  • 4 C Sugar

Mix well and place in jars. Refrigerate for at least 1 week .

Watermelon Rind

  • 4 lbs watermelon rind
  • Lime water( 2 T with 2 q water)
  • 2 T all spice
  • 2 T cloves
  • 10 (2 inch cinnamon sticks)
  • 1 1/2 q white vinegar
  • 1 lemon / sliced thin
  • 1 q Water
  • 4 1/2 lb sugar

Cut rind into 11/2 in cubes and soak 2 1/2 hours in Lime Water. Drain and Cook about 1 1/2 hours. Let stand overnight-Drain. Make spice bag out of cheese cloth and boil with vinegar,lemon,water and sugar. Add Rind and Cook until liquid is thick . Remove spice bag and place syrup and rind in clean hot jars. Seal .
