

Today is my Mom’s birthday ! I wish her a great day and since it’s her birthday here’s a Lemon Angel Cake recipe from her:

- 4 eggs / separated
- 3/4 C sugar
- 3/4 C lemon juice
- 1 1/2 tsp lemon rind
- 1 envelope unflavored gelatin
- 1/4 C cold water
- 3/4 C sugar
- 10 oz Angel food cake
- whipped cream
Cook together egg yolks,3/4 sugar,lemon juice and rind until thick-take off of stove. Soften gelatin in water and Add in mixture. Beat egg whites until fluffy and Fold in. Break cake into bite size pieces and fold in. Place in greased tube pan and refrigerate – un mold and top with whipped cream to serve. Can be made ahead of time.
