
It’s Fresh Corn time of year in Louisiana ! So Monday’s recipe is Fresh Corn Casserole :

- 2 C fresh corn/ cut from cob
- 1/4 C Celery /sliced
- 11/2 C toasted bread crumbs
- 1/4 tsp pepper
- 3 Eggs ? beaten
- 1 1/2 C fresh diced tomatoes
- 1/2 C chopped Onions
- 2 tsp Salt
- 1 T melted Butter
Combine all ingredients in a well greased baking pan. Place in a pan of hot water and Cover. Bake at 350 for 90 minutes or until set . Lisa
