Fresh Corn Casserole

It’s Fresh Corn time of year in Louisiana ! So Monday’s recipe is Fresh Corn Casserole :

  • 2 C fresh corn/ cut from cob
  • 1/4 C Celery /sliced
  • 11/2 C toasted bread crumbs
  • 1/4 tsp pepper
  • 3 Eggs ? beaten
  • 1 1/2 C fresh diced tomatoes
  • 1/2 C chopped Onions
  • 2 tsp Salt
  • 1 T melted Butter

Combine all ingredients in a well greased baking pan. Place in a pan of hot water and Cover. Bake at 350 for 90 minutes or until set . Lisa
