Cajun Spice Rub Shrimp Skewers

Ready for the Grill !

  1. Spice Rub
  2. 1 tsp salt
  3. 4 tsp  cajun seasoning
  4. 1/2 tsp garlic powder
  5. 1 tsp onion powder
  6. 2 tsp dried thyme leaves or 4 sprigs fresh thyme, leaves strippe
  7. 2 tbsp olive oil
  8. 1-1/2 lb uncooked medium shrimp,
  1. In a small bowl, combine the dry spice rub ingredients. Whisk until thoroughly blended. Add the oil to the remaining spice rub and mix to make a paste. Place cleaned shrimp in a medium bowl. With your hands, rub the spice paste all over the shrimp. Set shrimp in refrigerator for 15 to 20 minutes or until the charcoal is ready.

Make the Cajun Butter:

CAJUN BUTTER:1 cup butter, cubed, 1 teaspoon minced fresh basil, 1 teaspoon minced fresh tarragon, 1 teaspoon Cajun seasoning, 1/2 teaspoon garlic powder , 3 drops hot pepper sauce

Make skewers ( if using wooden ones they need to be soaked before using on the grill but if using metal -so head and get it ready for the grill. Make sure that the grill is prepared with a light coat of cooking oil before placing shrimp on Grill until done (about 2 minute a side) and serve with rice and cajun butter.
