Sunday Morning Brunch with Waffles

  • 2 1/2 c. all-purpose flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 4 large eggs
  • 2/3 c. maple syrup
  • 2/3 c. half-and-half
  • 6 tbsp. unsalted butter, melted
  • Oil, for greasing waffle iron
  • Strawberry jelly, if desired

  1. Preheat a waffle iron. In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  2. Step 2In a medium bowl, whisk together eggs, maple syrup, half-and-half, and butter. Stir egg mixture into flour mixture until just combined. Do not overmix; batter should be slightly lumpy.
  3. Step 3Oil waffle iron. Pour in batter and cook according to manufacturer’s instructions. Top with strawberry jelly and a sprinkle of confectioners’ sugar, if desired.
