Feeding a Crowd for New Year-

004Black eyed Peas & sausage Jambalaya 

  • 2 lb chopped onions
  • 2 bunches green onions /chopped
  • 1 bell pepper chopped
  • 5 cloves garlic chopped
  • 1 c parsley /chopped
  • 3 Lb salt meat /cubed
  • 3 lb smoked sausage /cubed
  • 3/4 lb dried black eyed peas /boiled until half done
  • 3 lbs Un Cooked Rice
  • 12 C of water

Saute -vegetables – Add meat,peas and rice. Add water bring to boil -mix then cover. Cook 45 minutes – Remove cover let sit 5/10 minutes . Serves 20-25 people.
