Homemade Peanut Brittle

Today is National Peanut Brittle Day !! So make a batch and give as gifts or care packages to your love ones away from home-

  • 2 C sugar
  • 1 C light corn syrup
  • !/2 C Water
  • 1 C butter in chunks
  • 2 C raw peanuts
  • 1 teaspoon baking soda

Butter 2 Cookie sheets : Combine sugar,corn syrup and water in a heavy sauce pan . Cook on Medium heat for 8-12 minutes. After it comes to a Boil ad butter in slowly while stirring for another 15-25 minutes ( candy thermometer reads 280) . Stir in peanuts and continue to cook for another 10-15 minutes (reach 305 ). Take off stove- and add baking soda . Pour hot mixtures onto prepared cookie sheet and let cool and harden.

DIY for gift giving :

I know you kept those old metal cookie tins from Christmas. Time to recycle cookie tins for a great container – just a little spray paint and a ribbon and your set. ( you may have to do a little sanding if its very glossy finish ) but spray paint comes in great colors these days, -so have fun. Lisa
