Lisa Food Blog : Potato Soup No Milk

Good Morning Everyone! Today on my Food Blog I am posting about Potato Soup. But Not a regular Potato Soup but one with No Milk or Cream. I love Potato Soup but my Hubby can not eat Milk. So Ihad to come up with a new way we could both enjoy this Soup.

Potato and Corn Soup ( No Milk)

  • 2 cans of sliced Potato (drained) or 3 potatoes diced
  • 1 C whole corn (drained) or 3 ears of Fresh corn
  • 1 C chopped Ham
  • 2 C vegetable stock
  • 2 glove Garlic chopped
  • 1 Red bell pepper chopped
  • 1 small onion finely chopped
  • 2 Tablespoon olive oil
  • Salt and pepper to taste

In a large sauce pan soften onion and bell pepper, in oil. Then add Ham , corn , potatoes and stock. Let Cook about an hour ( or until potatoes are soft) and blend with stick immersion blender until smooth. I like to leave some hunks up potatoes for texture. When serving you can top with cheese, bacon or chives.

Notes:

For those who are not dairy free, feel free to use unsalted butter and all-purpose flour.

I used can potatoes and whole Corn drained because that’s what I had on hand. But Fresh can be used. Sunsuit frozen corn or fresh for can corn -and Potatoes diced for can potatoes.

No leftover Ham – bacon or sausage will work.
