November treat : Apple Tray bake

WHAT IS A TRAY BAKE?

tray bake is (typically) a dessert that is baked in a square or rectangular pan and then cut into smaller pieces or slices! The name “tray bake” is a British term for a soft and chewy cake that is baked in a tray, cut into small squares, and served as a biscuit.

  • 9 oz butter softened
  • 9 oz light brown sugar
  • 4 large eggs
  • 1 tbsp ground cinnamon
  • 1 lb 2oz apples peeled cored and diced
  • 10 oz self-raising flour
  • 2 tbsp demerara sugar ( Raw Sugar) optional

Preheat the oven to 180℃ (160℃ fan)/350°F/gas mark 4. Grease and line a rectangular baking tin about  ( 9 x 11 in).

  • Beat the butter and sugar together until light and fluffy. Add the eggs one at a time beating well after each addition.
  • Beat in the cinnamon, then add the apples and mix well.
  • Gently fold in the flour until well combined. Spoon into the prepared tin and spread level.  Sprinkle over the demerara sugar if using
  • Bake in the centre of the oven for 45 minutes, until risen and golden. The cake will spring back when gently pressed in the centre with your finger
