
Another week has passed and Spring is her ! Hope everyone is enjoying the wonderful weather and try my latest brunch recipe.

Vegetable Fritata
- 6 eggs
- 1 C mozzarella cheese divided
- 1/4 Cup red onion chopped fine
- 1/4 C bell peppers
- 1 C favorite mushrooms chopped
- 8 stalks of asparagus chopped
- 1/2 C cherry tomatoes
- 1/4 C basil chopped fine
Preheat oven to 425 degrees. Whisk eggs together and add 1/2 of cheese and seasoning, Set aside. In a large skillet ( oven safe) in oil Saute the vegetables with out tomatoes until soft. Pour egg mixture on top and add tomatoes and rest of cheese. Bake about 15 minutes or until set.
Serve with Bread ,fruit or salad.
