Grilling or BBQ or Smoking ? Maybe All

Today is Thursday and  Our food find is BBQ or is it Grilling ? Or Smoking ?

Grilling is done with the lid up and you’re cooking with direct heat on the bottom, instead of all around the source.

Lots of time we do both around here. Sear the meat to brown (grill ) and then low and slow to Cook (BBQ)

And How about Smoking ? on a Gas Grill ?

Smoking is a barbecuing process that occurs when food is cooked with indirect heat at a temperature, usually below 200 degrees

You can also make your own smoker box. Here’s how: Place drained wood chips in a foil pan, cover with aluminum foil, and poke holes in the foil to allow the smoke to escape. Place the pan directly on the bars over an unlit burner or two, preferably in a back corner.
