
As part of my Recycling and Reusing theme this week I thought I would include some great leftover recipes that are a hit with my family. Enjoy
- 1 pound leftover roast beef, cubed
- 2 onions, thinly sliced
- 1 C homemade beef gravy
- 4 C mashed cooked potatoes
- 1 can of Mixed vegetables, drained. (peas,carrots and potatoes)

- Preheat oven to 350 degrees F (175 degrees C).
- cook sliced onions in a skillet until soft.
- Then place roast beef in an even layer in bottom of a 2 quart casserole dish. Cover with cooked onions and add vegetables .Then mix in the gravy. Spread mashed potatoes over top.
- Bake in preheated oven for 1 hour, until potatoes are browned.
