National Aunt and Uncle Day * Recipe

Today is National Aunt and Uncle day ! 

  As a child everyone in the family new that Sunday lunch was served at Aunt Jane’s house , Cooked by Uncle Wesley it was a set menu – Chicken & brown gravy with Green Peas . With potato salad  and Biscuits. In honor of those happy times around the table Lunch is served this Thursday.  Enjoy ! Lisa

  • 1 Cut up Chicken
  • 1/2 C Chopped bell pepper
  • 1/2 Chopped  Onion
  • 1/2 stalk celery
  • 1 clove garlic   minced
  • Salt,pepper and creole seasoning
  • Flour  & oil

Season chicken and brown chicken in a small amount of oil. Sprinkle with 3 T of flour and brown. When flour is cooked add vegetables. Cook until wilted. Add hot water to cover chicken -and Stir. Cook to a rich thick sauce and Chicken is cooked.  Serve over white Rice.

  • You can also drop in can biscuits cut into pieces to form dumplings.

Aunt Jane always served this with green peas.

  • 2 tablespoons unsalted butter
  • 1/4 cup minced yellow onion
  • 1 pound frozen green peas, not thawed
  • 1/2 teaspoon salt

Melt butter in a medium saucepan over medium-high heat. Add onion and cook, stirring, until soft, about 3 minutes. Add peas and 1/2 cup water and bring to a boil. Reduce the heat to medium-low, cover saucepan, and simmer until tender, about 4 minutes.Remove from heat and Add salt &pepper.
