My Kitchen * Frog Legs

I am finishing the week with Leap Year Fun ! So today on the menu Frog Legs :

French Style Frog Legs :

Frogs legs, skinned and cleaned- 2 pounds

Dry white wine- 1 1/4 cups

Butter- 6 tbsps

Flour- 1 tsp


Parsley, finely chopped- 2-3 sprigs

Juice of 1 small lemon

Directions :

Marinate frog’s legs in white wine

Melt the butter in a deep frying pan. Take the frog’s legs from their marinade, put them aside and pour the wine into the pan. Mix this thoroughly with the butter, then add the legs. Cook over a moderate heat until the wine is reduced by half.

Mix the flour, a pinch of salt and the parsley with 2 tablespoons of water. Stir this into the pan and continue to cook over a moderate heat for another 15 minutes. Sprinkle the frogs legs with lemon juice just before serving.
