Welcome to my Wednesday food blog post. Today’s recipe is Sweet Potato bread.

Why sweet potato? Well the first of the month the FDA mobile food pantry makes a stop here in town with grocery items . And I try to share on the towns Facebook page recipes to use for whats on the truck today its Sweet potato.

I use a basic banna bread recipe to make it. I used fresh potatoes but you can use canned.

13/4 c shifted flour

2 tsp baking powder

11/2 tsp Cinnamon

1/2tsp nutmeg ( or pumkin spice mix)

1/4 tsp baking soda

1/2 tsp salt

1/3C shortening

2/3C sugar

2 eggs

1 c of mashed sweet potatoes

If you are using fresh sweet potato. Peel and cube up potatoes and place in covered bowl with a little water and cook about 5 minutes or until tender. Let cool and mash.

Cream shortening add sugar. Beat. Add eggs Beat. Add dry ingredients Beat. Add potatoes in Beat. Pour into a well greased loaf pan and cook at 350 degrees for about 1 hour.

Sweet potato roasted:

Great peeled and sliced in even pieces. Place on a large sheet try with butter,, olive oils and spices.. and roasted at 425 degrees for about 20 minutes turning as needed. Makes a great side dish.
