January Food Blog: ABC Soup Recipe

January is National Soup month and today I am starting the month off with Alphabet Soup in honor of first day back to school after Winter Break :

  • 8 Cups of vegetable broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 12 oz frozen Mixed vegetable
  • 1 Cup of Cubed potatoes
  • 1 can diced petite tomatoes
  • 1/4 c of Alphabet pasta
  1. Pour vegetable broth in a soup pot and bring to a simmer over medium heat.
  2. Add the peeled and diced potatoes.
  3. Simmer until the potatoes are all the way cooked through.
  4. IMPORTANT for BEST RESULTS – if you add the tomatoes before the potatoes are cooked completely the acid in the tomatoes will stop the potatoes from cooking and turn them hard!
  5. Add the frozen veggies and cook until thawed and heated through.
  6. Add the diced tomatoes and alphabet pasta.
  7. Add the onion and garlic powder.
  8. Once the pasta is cooked though remove from the heat, cool slightly and serve!
  9. Store leftover soup in an airtight container in the fridge!
