Louisiana Yam Pie 

It’s not Thanksgiving without Pie. And at the market I found sweet potatoes (yams) perfect for my pie. 

  • That sweet, orange-colored root vegetable that you love so dearly is actually a sweet potato. Yes, all so-called “yams” are in fact sweet potatoes. Most people think that long, red-skinned sweet potatoes are yams, but they really are just one of many varieties of sweet potatoes.
  • 2 C yams cooked and mashed
  • 2 eggs beaten
  • 1/4 tsp salt
  • 3/4 C milk
  • 1 C sugar
  • 1/2 C melted butter
  • 1 tsp vanilla
  • 9 in unbaked Pie shell 

Mix all ingredients together and pour into pie shell. Bake at 350 for 1 hour. Top with whipped cream.
