Granny’s Crab meat Au Gratin

Ready for another Lent Friday recipe? Today in honor of my Granny birthday it’s :

Crabmeat AuGratin
  • 1 lb white crab meat
  • 1/2 lb cheddar cheese /grated
  • 1 can evaporated milk
  • 1/2 C flour
  • 1/4 lb butter
  • 2 Egg yolks
  • 1 rib celery chopped/fine
  • 1 C onion chopped/fine
  • 1 tsp salt
  • 1/2 tsp each : red and black pepper

Saute onions and celery in butter. Blend in flour-add milk and stir. Add egg yolk,and pepper cook 5 minutes. Blend in crab meat -stir. Place in lightly greased baking dish and sprinkle with grated cheese. Bake at 375 for 10 -15 minutes.

Serving Tips :

This is a very rich dish : can be served as a main dish with french bread and a salad . Or in individual small baking dishes as a side dish…Lisa
