Melville Fired Dept Pastalya

Hello ! Road trip friends . Today’s post I am home for the weekend –Melville,la.

We had a busy weekend in Melville with community events . We started Saturday with a Fall parade and town festival. And Sunday with the Melville Volunteer Fires department fundraiser. On the menu cooked by the Fire Chief Cole – Pastalya lunch. Yum !

louisiana Pastalya recipe

  • 2-3 Tablespoons Cooking Oil
  • boneless chicken thighs
  • 1 package Hillshire Smoked Sausage, sliced
  • 1/2 cup red bell pepper, chopped
  • 1/3 cup red onion, chopped
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon minced garlic
  • 1 10 ounce can Rotel
  • 1 lb of pasta ( Penna or spaghetti)
  • One bunch of chopped green onions
  1. Heat oil over medium heat in a large pot.
  2. Add sausages, chicken, red pepper, and red onion to the pot. Cook until the sausage & chicken starts to brown and the vegetables soften.
  3. Add chicken broth, water, creole seasoning, paprika, garlic, and rotel.
  4. Mix and bring to a boil.
  5. Add pasta and cover until pasta is cooked through.
  6. Top with chopped green onions

Just like jambalaya with rice the meat can be changed out for whats available : like pork or shrimp. Lisa
