
Welcome to Saturday ! We made another week at staying at home.
We are all doing okay – I am just adjusting from an empty house during the day from a husband home fighting me for computer time and my son home from college doing school work at home again. Just as we get adjusted they will lift the ban. But school is canceled for the year. Hope this post finds you all healthy and happy. Today’s brunch idea is Honey Muffins. We could use a little sweetness in our life and this is a family favorite. Lisa

- 2 C flour
- 1/2 C sugar
- 3 teasp baking powder
- 1/2 tsp salt
- 1 lg Egg
- ! C milk
- 1/4 C butter ,melted
- 1/4 C honey ( good stuff)
- Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, butter and honey. Stir into dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
