Today we are talking about  – Tailgating – Louisiana style.  

A tailgate party is a social event held on and around the open tailgate of a vehicle. Tailgating, which originated in the United States, often involves consuming alcoholic beverages and grilling food. Tailgate parties occur in the parking lots at stadiums and arenas, before and occasionally after games and concerts.

So What makes it Special – The Food  !

On Today ‘s Menu  – Gumbo

* I will be the first to tell you everyone has there own recipe. Goggle it -tons of recipes & video- But it various from house to house and areas  of Louisiana you live in. It can be made with about anything – meat,seafood ,wild game and poultry. It can be made quick or cooked low and Slow. Here’s the Basics of Gumbo-

Chicken -Clean and cut up. Place in bot with water and let boil. Cook about an hour. Strain. Liquid is your base. De bone and save chicken

You need to make a dark roux in an iron skillet. This takes a while -don’t burn it.  ( Don’t have time buy the Jar kind – my secret to save time)  Brown onion,bell pepper and celery until done.

Add together in a large pot –  Stock ,chicken ,roux mix -add sausage and seasons to taste. And let Cook. The longer it cooks the better.

  • Instead of a pot I have used a slow cooker -set on Low and let cook 6-8 hours.

 

Sometimes you need a quick method – and my mega mart saves the day. Around here you can buy Roux already made and Chopped up Trinity Frozen. Also instead of making stock buy it and used already cut up chicken that will cook in shorter time. Or making seafood gumbo use frozen seafood or okra if not in season to make a gumbo. – try adding dried shrimp to the mix.
