So to Start off the Holiday : Almond Cookie
Chinese almond cookie is a plain cookie with an almond in the center, which was thought to bring good luck.
- 1 cup butter, soften to room temperature
- 1 cup sugar
- 1 egg
- 1 1/2 teaspoons almond extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups all-purpose flour
- 1 egg white, beaten with 1 teaspoon water
- 2 tablespoons sliced almonds
Set Oven at 325 degrees / line baking sheet with Parchment .
In a bowl cream together butter and sugar until light and fluffy. Beat in 1 egg, almond extract, baking powder, and salt. Slowly add in the 3 cups of flour. Beat until the batter is blended well. I let the dough chill a little -then drop cookies by Tablespoon onto cookie sheet. Flatten with finger or bottom of glass. Was with egg wash & place almond on top. Bake for 16 to 18 minutes.
