Chinese New Year * Almond Cookie Recipe

Today is Thursday & the start of Chinese New Year! You might think why is she celebrating that? Well my hubby is Chinese American ( ABC) meaning American Born Chinese & we celebrate the holiday at my house with friends & family . Lisa

So to Start off the Holiday :  Almond Cookie

Chinese almond cookie is a plain cookie with an almond in the center, which was thought to bring good luck.

  • 1 cup butter, soften to room temperature
  • 1 cup sugar
  • 1 egg
  • 1 1/2 teaspoons almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour
  • 1 egg white, beaten with 1 teaspoon water
  • 2 tablespoons sliced almonds

Set Oven at 325 degrees / line baking sheet with Parchment .

In a bowl cream together butter and sugar until light and fluffy. Beat in 1 egg, almond extract, baking powder, and salt. Slowly add in the 3 cups of flour. Beat until the batter is blended well. I let the dough chill a little -then  drop cookies by Tablespoon onto cookie sheet. Flatten with finger or bottom of glass. Was with egg wash & place almond on top. Bake for 16 to 18 minutes.
